Tahu Isi (Indonesian fried Stuffed Tofu)



Ingredients:
- 1 block of tofu diagonally cut and deep fried, make hole manually with spoon, set aside.
- 50gr carrot cut into jullian
- 50gr bean sprout
- 2 spring onions sliced
- 3 garlic minced
- 2 shallots minced
- Pepper
- Salt
- Oil for deep frying

Batter for the Tofu:
- 1/2 cup rice flour
- Salt
- Pepper
- Water

Directions;
- Heat little bit oil in a pan, add shallot and garlic when the oil is hot.
- Add carrot stir until carrot is softed.
- Add the rest of ingredients and stir thoroughly.
- Adjust seasoning to your liking.
- Fill the tofu with the filling.
- Mix all batter ingredients.
- Heat oil for deep frying in a pan.
- Dip tofu one by one in batter mixture.
- Deep fry until golden brown.
- Eat warm with bird’s eye chili or sambal sauce.

Medanese Style Chicken soup with coconut milk (Soto Ayam Medan)



Ingredients (serve 6):
2 lbs chicken breast
1 bay leaf
1 tbsp ground lemon grass or 1 lemon grass
5 lime leaves
1/2″ galangal
1 cup coconut milk
3 hard boiled eggs
6 cups bean sprout -> boil quickly before serving
2 tbsp soy sauce
1 tsp salt -> 1/2 tsp salt
1 tbsp sweet soy sauce

Spices:
8 shallots
3 cloves garlic
1/2 tsp pepper
1/2 tbsp ground coriander seed
1/2 tsp turmeric
1/2″ ginger
3 nutmeg

Garnish:
1 green onion
fried shallots




Directions:

1. Put chicken and 4 cups of water in sauce pan and turn the heat to high. When the water boils, turn the heat to low, and put in bay leaf, lime leaves and galangal. Simmer for another 8 – 10 mins, put the chicken aside and leave the chicken broth on low heat.
2. Put all the spices in a blender, and ground them. Spray oil on frying pan and stir fry the ground spices for 1-2 minutes. Put the ground spices and salt and sweet soy sauce in the chicken broth and mix well.
3. Put the coconut milk into the chicken broth mix and stir every 10 minutes or so under low heat. Stirring under low heat is important, because otherwise the coconut milk won’t mix well. Keep doing this for 1 hour.
3. Cut chicken into bite sizes, and mix well with soy sauce, then stir fry for 3-4 minutes.
4. On a bowl, put half hard boiled eggs, bean sprout and chicken. Garnish with green onion and fried shallots. Pour 1/6th of the broth mix on top of it. Enjoy!

Tofu in soy sauce (semur tahu)





Ingredients:


* 4 blocks of tofu, deep fry until half-cooked
* 4 shallots, sliced
* 3 cloves of garlic, sliced
* 2 tblsp oil
* 3 cloves
* 1 tsp of white pepper powder
* 2 whole cardamoms
* 1 tomato, diced,
* 2 tblsp of ketchup
* 5 tblsp (or to taste) kecap manis (sweet soy sauce)
* 1 1/2 cups water
* sugar and salt to taste

Direction:

* Heat oil in the pan, add sliced shallots and garlic, stir fry until fragrant.
* Add white pepper powder, cloves, cardamoms, tomato and ketchup, sugar and salt continue to stir fry for about 1 minute.
* add sweet soy sauce, and tofu stir well, and lastly add water.
* Simmer, uncover until the water evaporate to half and a bit thickened.
* Remove from heat and Sprinkle with fried shallots.

Sambal goreng kentang (Spicy fried potatoes)



I had half package of chicken gizzard left over in the freezer. so I tried to make this sambal goreng kentang instead of wasted. so here is the result, spicy fried potatoes with chicken gizzard, enjoy!


Ingredients:

* 500 gr Potatoes, cut into small cubes
* Oil for frying
* 10 chicken gizzard, cut into small pieces
* 1 cm galanggal
* 1 bay leave
* 1 lemongrass

Grind ingredients:
* 5 coves onion
* 2 cloves garlic
* 8 red chillies
* 1/2 teaspoon salt and sugar
* 1 tomato

Method:


1. Grind together onion, garlic, chilies, sugar, salt and tomato.
2. Meanwhile, fried the potatoes with oil until brown or until cook through , set aside.
3. Heat 1 tablespoon oil in a large saucepan, add grind ingredients and cook for 1 minute.
4. Add galangal, bay leave, lemongrass and chicken gizzard, cook for another 1 minutes, add potatoes and cook for further 5 minutes or untill the chicken gizzard cook through.
5. Serve with white rice.

Spicy Stir Fried Green Beans (Sambal Goreng Buncis)



Ingredients:

200 gr young green beans, finely sliced
50 gr of chicken gizzard, cut into pieces
2 bay leaves
1 cm galangal, smashed
100 ml thick coconut milk
8 cloves shallots (make it paste)
4 cloves garlic (make it paste)
5 pieces of green chili, finely sliced
2 tblsp cooking oil
salt and sugar to taste
pepper to taste

Direction:

-Heat oil in a wok. Stir fry shallots and garlic paste and chili over medium heat for approximately 2 minutes. Add galanggal and bay leaves, and then add chicken gizzard, cook for 2 minutes, add the string beans, and stir well for about a minute.
- Then add all the other ingredients and stir well for another 5 minutes, or until the green beans are soft but still crunchy.

Getuk Lindri (Indonesian Cassava cake)

Getuk Lindri is one of Indonesian traditional culinary. it is made from ground cassava with grated coconut. i missed getuk lindri when i was in my hometown last time. I couldn't found this getuk lindri in the market, i mean in the traditional market of course. its quite hard to find this dish nowadays specialy in my hometown. so here is my first attempted of getuk lindri, a very simple but taste good.



Ingredients:
1 whole cassava
50 gram of granulated sugar
½ tsp. vanila
1 cup steamed fresh-grated coconut, mixed with 1 tsp. salt
50 cc water
food color

Directions:
Put in sugar and vanila in a pot with water and bring it to boil. Peel cassava, Steam cassava until soft and then Mash cassava while still hot and pour the water mixture and food color (what ever color you desired) and blend well. Shape as your desired, and last sprinkle with grated coconut.serve and enjoy it!

Nasi goreng (fried rice)

Nasi goreng, literally meaning "fried rice" in Indonesian and Malay. Nasi goreng is a simple dish that is easily modified and can be prepared in as little as five minutes. It is so common, that every household has its own recipe. I love nasi goreng serve with a fried egg on top, together with pickles and some kerupuk (prawn crackers). Enjoy!




Ingredients:


* 1 cup cold cooked rice
* 1 tablespoons oil
* 1 egg, fried
* 1 tblsp of dried anchovy, fried
* 5 shallots, pasted
* 2 cloves garlic, pasted
* 3 red chilies, pasted
* 1 teaspoon dried shrimp paste
* 1/2 teaspoon salt
* 1 tablespoon sweet soy sauce

Direction:

* Pour a small amount of oil in a wok and fry the egg, set a side.
* fry the anchovy till golden brown n crisp, set a side
* Heat the remaining oil in the wok and fry the shallots, garlic, chilies and shrimp paste for a minute .
* Increase the heat to high and add the rice, salt, anchovy and soy sauce, adding a little oil if necessary, stirring constantly until well mixed and heated through.
* Garnish with fried egg.

Recipe of Banana Fritters :

3 ripe bananas, mashed. 1 egg, 1 cup of flour and a pinch of salt. cooking oil for deep frying. mix all ingredients in a bowl. then fry ’till its done.

Soto Ayam/Chicken Soup


Ingredients:
500gr boneless chicken
1 can coconut milk
1 liter chicken stock
1 cup water
cooking oil
sugar n salt

Seasoning Paste:
1 tsp coriander powder
1 tsp cumin powder
4 shallots (chopped)
3 cloves garlic (chopped)
1 tsp turmeric powder
2 inc galangal (chopped)
1 lemon grass
1 tblsp of lemon juice


Other ingredients:
sliced cabbages
bean sprouts
1/2 pack of vermicelli
2 limes, cut into wedges
2 hard-boiled eggs (cut into wedges)
1 of spring onion (chopped)

Directions:
Pour some oil in a pot and add in the seasoning paste. Stir the seasoning paste and wait till it turns light brown. Add in chicken stock, coconut milk, lemon grass and water. Once the stock starts boiling, add in chicken. Cover the pot and lower the heat and simmer for 30 minutes. Add salt to taste.

Blanch beansprouts, soaked vermicelli, cabbages in another pot of boiling water and transfer them into a bowl once they are cooked. Add in toppings of hard-boiled eggs, chopped spring onions and pour the hot chicken stock into the bowl. Serve hot with lime wedges.

Bakwan Sayur / Vegy Fritter w/ Peanut Sauce



Peanut Sauce
Ingredients:
1/4 cup peanut butter
2 teaspoon soy sauce
1 Tablespoon brown sugar
1 Tablespoon fresh lemon or lime juice
1/4 cup coconut milk
1/4 cup water
4-5 red chili
3 cloves crushed garlic
5 shallots, crushed.

Method:
Combine all ingredients with a whisk in a small bowl, adding the water in last. Pour into a small saucepan and heat over medium heat until sauce begins to bubble and thicken springkle with lemon juice. Serve hot or cold.

Pepes Tahu / Steamed Tofu



Ingredients:
4 medium size of tofu, mashed.
2 tbsp anchovies
4 red chille, finely cut
3 tsp small dreid shrimp
2 cloves of garlic, crushed
3 shallots, finely cut
2 medium size of tomatoes, finely cut
2 cm of galanggal finely chopped
spring onion, cut into small size
1 lemon grass
oyster oil as desired
salt and sugar to tasted.

Directions:
mix all ingredients in a bowl. then put into banana leaves or foil, steame for about 15 - 20 minutes. and ready to serve.

Too Lazy to cook, and no idea what to cook. and finally ended up with this simple dish :D yet yummy at least for me *LOL*



What u need: Anchovy and soy bean (fried).
Finely cut Green chille, shallot, garlic, tomato. salt and sugar to tasted, and a lil bit cookin' oil.
hot the oil in the frying pan, add shallot, garlic then green chille. then add tomato. and lastly add anchovy and soy bean. ready to serve.

Bubur Candil ( Glutinous Rice Ball Porridge)




Ingredients:
• 200 grams glutinous rice flour
• 175 cc + 750 cc water
• 200 grams brown sugar
• 3 pandan leaves
• 2 tablespoon rice flour and 1 table spoon glutinous rice flour, diluted with some water.
salt

Coconut Milk Sauce:
• 250 cc thick coconut milk from ½ coconut, cooked with ¼ teaspoon salt

Preparations:
• Mix glutinous rice flour and salt. Pour 175 cc water a little at a time, kneading constantly until the dough can be shaped. Make balls with a 1 cm diameter and set aside. Sprinkle with a little wheat flour, to prevent the balls from sticking together
• Heat 750 cc water with brown sugar and pandan leaves until the sugar is dissolved, sieve and bring to boil again.
• Put in glutinous rice flour balls and cook until the balls float and are done. Thicken with rice flour and glutinous rice flour liquid. Stir until all is done.
• Serve in bowls, pour coconut milk sauce on top.

Mie/ Kwetiaw Goreng Ebi

Lagi ngefans ama ebi nih hehehe...abis enak sih, jadi semua masakan ditambahi ebi :D
resepnya nyontek dr dapurnya mbak esther, cuma di modif dikit dgn bahan yg ada didapur hehehe...rasanya? muantaffff




ingredients:
1 bungkus kweetiaw kering direbus sebentar lalu setelah lemes langsung ditiriskan dan bilas dengan air dingin hingga kweetiauw dingin. Sisihkan.
2 sdm ebi bubuk (boleh lebih atau kurang tergantung selera)
1 sdm bawang putih
1 buah cabe merah
haluskan semua bahan.
1 dada ayam, potong kotak2 kecil
3 buah telur
200 gr taoge
1 buah bawang bombay
2 batang daun bawang
1 sdm kecap asin
1 sdm saus tirem
1/2 sdm kecap manis
1/2 sdt merica
1 sdm minyak wijen


Directions:
Buat orak arik dari telurnya, angkat dan tiriskan.
Pakai minyaknya buat menumis ebi yang dihaluskan beserta bumbu, sampai harum lalu masukkan ayamnya, masak hingga matang, masukkan kecap2nya semuanya.
Masukkan kweetiawnya aduk rata, masukkan toge dan telurnya, aduk hingga toge agak layu, kemudian beri daun bawang dan minyak wijen, aduk rata angkat dan sajikan dengan ditaburi bawang goreng jika suka.

Bakwan Sayur Ebi

Akhir2 ini cuaca mendung dan hujan. pengennya sih ngemil gorengan yg anget2. akhirnya karna mau menuruti keinginan si perut ini, jadilah si bakwan ini :D
kebetulan bahan2nya ada semua, utk ukurannya kira2 ndiri aja yah hehehe...



Ingerdients:
kol diiris agak tipis secukupnya
tauge secukupnya
1/2 can jagung manis
tepung terigu
1 buah telur
3 sdm ebi
daun bawang, iris kira2 1cm
bwg putih bubuk
merica bubuk
garam/gula sesuai selera
minyak utk menggoreng

Directions:
campurkan semua bahan2 diatas, aduk2 hingga tercampur rata. kemudian goreng sampai matang.
